Bread with 5 kinds of flour

Flours: bread, oat, coconut, almond and high gluten, in that order. 3parts then 2/3 part oat, 2/3 part coconut, and a couple heaping tbs each of almond and gluten.
Salt 2/3 tsp mixed in with the sifted flours (are you spose to sift these days)
Separate bowl:
Bubbled 1 and 1/2 cup warm water (it’s warm enough if the instant yeast dissolves fast, and keep a little more warm on the side in case you like a wet dough, you can tell when mixing.) with 2tbs yeast, 2 and 1/2 tbs sugar. for just a couple minutes as it should froth fast.
Mixed the bowls, I use a big spoon to form a ball, I like it on the wet side but still able to knead it with some flour dusting for this application.
Kneaded at least 100 times which is going at it for at least a 4-5 minutes to 10 minutes if I can keep from sweating in the dough.Separated in two (the dough likes some rest periods in there like after mixing in liquids- dough’s have a personality depending on a bunch of factors that I’m not going to write a book about) and set in bread pans which I like to jam a piece of parchment into with another pan and just trim the edges later and be sure to put some oil on the dough ball so it doesn’t dry out while trying to rise and I guess it doesn’t stick to the paper so much either.
Ok, that’s too much about some bread that I should have put in one pan but there it is in two and I’m’ hungry so hurry up and cool down. They say the crumb is greatly affected if you don’t let it cool on a rack in non drafty room until it reaches room temp.

Rose fast. Cooked thoroughly with 400F 25 minutes. This amount would be good for one large (what is it 5×9 four inches high) loaf pan. I split it between two pans and it filled the pans but only rose about half the way up which was a huge expansion, just not high enough unless slicing sideways for very thick sandwhich, which would be good. The crumb was a little bubbly, moist, and not too dense but enough to hold together to make little sandwiches that held together great, tasted very good and had a nice chew too. Also next time I might add a little oil like coconut or butter, make it just a little more soft, and getting some spices in there like foccacia would be nice. Yeah, I want it all…This is just a quick rise, healthy flour bread. Got some pepporoni and whole milk mozzarella for some pizza coming up…
